PBFWF Recap: Chef Welcome Party at The Breakers
An avid supporter of the Palm Beach Food & Wine Festival, our team was honored to host the Chef Welcome Party for the event’s 12th anniversary celebration last month.
This year we celebrated with a South Beach chic-themed event at The Beach Club. Take a peek inside this special kick-off soiree, featuring decor by our talented in-house Design Studio team…
This exciting night for foodies and famed chefs featured unique stations and passed bites by The Breakers Executive Chef, Jeff Simms, along with an array of wines selected by Master Sommelier Virginia Philip.
On the menu: (pictured below, clockwise from left) Guacamole on a Plantain Chip, Spicy Octopus Ceviche, Mojo Baby Lamb Chops with a mint mango chutney and Coconut Chicken with an orange horseradish sauce. Guests also enjoyed Caviar Potato Tacos with a Tito’s Vodka shot and Caramelized Maui Onion, Walnut and Brie Cheese Tartelettes.
Jeff Simms’ specialty menu included four unique stations:
POKE BAR with choice of tuna or salmon and sticky rice. Toppings included Seaweed Salad, Pickled Vegetables, Chopped Scallions, Black Sesame Seeds, Spicy Shredded Krab, Chopped Cucumber, Shaved Radish, Fresh Cilantro Sriracha Aioli, Ponzu Sauce and Crispy Wonton Chips.
SHORT RIB MARTINI STATION featuring Guava Glazed BBQ Short Ribs served atop mashed potatoes, Bonita Smash Indian River Orange & fennel slaw and crispy yuca.
CRAB CAKE & HEARTS OF PALM CAKE STATION featuring Jumbo Lump Crab Meat “Maryland Style” & Hearts of Palm Cake, sautéed golden brown and served with roasted pineapple salsa, red pepper aioli and crispy yucca.
CARIBBEAN JERK SPICED PORK LOIN & CHICKEN STATION carved to order and served with papaya chutney and habanero citrus aioli, miniature yucca rolls and sweet potato tots with spicy mango ketchup.
And at the bar…
Hendrick’s created custom concoctions from a unique contraption…
For dessert, guests enjoyed decadent Chocolate Palm Trees with warm, rum-soaked, caramelized pineapple over coconut and vanilla ice cream.
Passed sweets included Chocolate Dipped Coconut Macaroons, Bite Size Coconut Cream Pies, Salted Chocolate Frozen Banana Bites and Pineapple Upside Down Cake.
The night ended on a sweet note with to-go Mini Key Lime Pie Bundt Cakes topped with fondant drizzle and lime rind.
