PBFWF Recap: Chef Welcome Party at The Breakers
An inaugural supporter of the annual Palm Beach Food & Wine Festival, our team was honored to be a part of the 11th anniversary celebration last month.
For the fourth year in a row, we hosted the Chef Welcome Party—and this year we brought the heat, hosting the fire-themed event on the Front Lawn.

The exciting night for foodies and famed chefs featured a fire-inspired menu with unique stations and passed bites by The Breakers Executive Chef Jeff Simms, along with an array of wines selected by our Master Sommelier Virginia Philip.
Adorned with shirts that named each yummy passed bite, our team served as “Living Menus” during the reception. On the menu: (pictured below, clockwise from left) Ghost Pepper Buffalo Cauliflower Sliders, Tempura Veggies with Sweet Island Chili Sauce, Cheeseburger in Paradise and “Red Rooster” Spiked Deviled Eggs with Candied Bacon. Guests also enjoyed Spicy Tuna Cones with Avocado Mousse, Habanero Scallop Ceviche and Pancetta Wrapped Jalapeno Poppers.
Jeff Simms’ specialty fire-inspired menu included four unique stations:
HOT! HOT! HOT! GRILL STATION featuring Grilled Whole Lamb, Creekstone Farms “Brontosaurus” Beef Ribs, Homemade Saucisson, Bell and Evans Free Range Chicken and Whole Irish Salmon Sides roasted on Cedar Planks.
HELL FIRE CHILI STATION featuring Chef Simms’ beloved family recipe. Extra special: Simms enjoyed the delicious dish with his twin brother, pictured below.
SHRIMP FRA DIAVOLO STATION featuring Blistered Tomatoes, Calabrian Peppers, and Fresh Shaved Parmesan.
WARM RACLETTE CHEESE STATION featuring Raclette Cheese Wheels melted over Grilled Veggies, Oven Roasted Rosemary and Garlic Fingerling Potatoes.
And at the bar…
PERONI sponsored the bar, providing our bartenders with some pretty groovy fedoras…
Jack Daniels brought the heat with a Volcano Ice Luge featuring a taste of their Tennessee Fire.
For dessert, the decadent CLASSIC FLAMBÉ DESSERT STATION featured Crepe Suzettes flambéed with Grand Marnier and Cherries Jubilee flambéed with Cherry Brandy.
Passed sweets included Mini Red Velvet Molten Cakes, Crème Brûlée Spoons (in Classic Vanilla Bean, Pistachio & Godiva Chocolate flavors), Baked Alaska “Bites” (in Coffee, Cookies and Cream & Mint Chocolate Chip flavors) and Toasted Marshmallow S’mores Cones.
