PBFWF Recap: Chef Welcome Party at The Breakers
A inaugural supporter of the annual Palm Beach Food & Wine Festival, The Breakers Weddings & Celebrations Team was honored to be a part of the 10th anniversary celebration last month.
For the third year in a row, we hosted the Chef Welcome Party (this year, in the The Circle Ballroom!) Take a peek inside this special kickoff event…
The exciting night for foodies and famed chefs featured a Cuban-inspired menu with unique stations and passed bites by The Breakers Executive Chef Jeff Simms, along with an array of wines selected by our Master Sommelier Virginia Philip.
The decor highlight of the night was a stunning ice sculpture at the entry to The Circle. Our team worked with the gurus at Styled Ice to create the incredible fruit-filled piece.
Guests enjoyed a selection of yummy passed bites, including Mini Cuban Sandwiches, Ham and Cheese Croquettes, Guava and Smoked Gouda Crispy Ravioli, Empanadas de Espinaca (pictured below), Saffron Rice Balls, Florida Snapper Ceviche and Avocado Mango Tostada Cups with Braised Cuban Chicken and Rice.
Jeff Simms’ specialty Cubnan-inspired menu included five unique stations:
WHOLE ROAST PORK STATION with Mojo Marinated Suckling Pig served with Sugar Cane Roasted Calabaza Squash, Sweet Plantains, Yucca Rolls and traditional Cuban breads.
HEARTS OF PALM CAKE STATION with Fire Roasted Pineapple Salsa, Roasted Corn Chayote Relish, Grilled Pineapple, Mango and Housemade Guacamole.
SHRIMP & LOBSTER HEMINGWAY STATION with Jalapeno Rum Butter and Citrus, served over Whipped Boniato Potatoes.
CHURRASCO STATION with Grilled Skirt Steak, Chimichurri Rice and Bean Martinis and Crispy Yucca Fries.
For dessert, the decadent SWEET TASTE OF HAVANA STATION featured Coconut and Banana Bread Pudding with Sautéed Caramelized Bananas and Rum Raisin Caramel Sauce, along with Salted Caramel Ice Cream Churros and Buneulos.
Passed sweets included Mini Mojito Bundt Cakes (above), Dulce de Leche Mousse Martinis, Caramel Flan, Chocolate Cappuccino Cups with Arroz con Leche, and Brazo Gitano Empanaditas de Guayaba. Yum!
