For The Foodie: Meet the Heirloom Tomato Salad

With summer just around the corner, we had to share one of the fresh and scrumptious salad creations coming out of The Breakers’ kitchen…
Crafted with local, farm-raised Heirloom tomatoes, fresh veggies from The Breakers Herb Garden and a touch of aged 50-year-old aged Balsamic Vinaigrette; this salad is as good for you as it is delicious.
Behind the dish…
Breakers’ Executive Chef Jeff Simms shared some of the ingredients in his secret recipe:
- Local Heirloom Tomatoes, sliced and seasoned with sea salt
- Jubilee Tomatoes, or red and yellow cherry tomatoes if jubilee’s are not available, tossed with olive oil and chopped herbs
- Thinly sliced English Cucumber, shaved Cherry radish and Pea tendrils
- Pickled breakfast radish — pickled with red wine vinegar, peppercorns, orange zest, and local cane sugar
- Micro Celery, Micro Cilantro and Basil Stem with Bloom from The Breakers Herb Garden
