The Breakers’ Wedding and Special Events team met this morning over scones and tea and watched together in awe as Prince William and Miss Catherine Middleton became The Duke & Duchess of Cambridge!

With more than 70 years of combined wedding and special events experience at The Breakers, our team was delighted to see all the flawless pairing of tradition and Royal elegance with modern and personal touches. It was such a pleasure to watch a bride and groom so genuine in their feeling of love and admiration for one another. And the two kisses on the balcony – what a treat!

What we loved….

• The Dress: Catherine was a vision in Sarah Burton for Alexander McQueen. The dress was traditional, yet modern, and perfectly fit for a princess.
• The quotes: By far, our favorite part of the Royal affair was this quote from The Bishop of London: “In a sense every wedding is a royal wedding with the bride and the groom as king and queen of creation, making a new life together so that life can flow through them into the future.”
Our team couldn’t agree more! Every wedding at The Breakers is like a Royal wedding and our brides and grooms are treated as princesses and princes during their fairytale weddings.
• The ambiance: Despite the thousands of onlookers outside and nearly 600 guests inside Westminster Abbey, the ceremony felt very personal and intimate. It was a Royal Wedding, but it was also a real wedding.
• The emotion: We loved all the stolen glances between William and Kate, the whispering between Prince Harry and Prince William – “She looks beautiful” – and even the comment from Kate’s father to the bride, “Are you ready?” When Kate stepped onto the balcony she said “Oh, wow!”
• The readings: Each prayer – including the one William and Kate wrote themselves – were beautiful, emotional and personal.

What we expect to trend after the Royal Wedding….

• Tradition: We hope the Royal Wedding will inspire a return to elegance with more regal, traditional weddings and the pairing of formalities and modern touches.
• The Dress: We loved Kate’s choice to go with designer Alexander McQueen’s gown by Sarah Burton! We expect to see more brides with lovely lace, long sleeves and longer trains.
• Floral: Bringing trees into your ceremony décor! It brought a beautiful softness to the Abbey and is something we expect to see recreated.
• The Bouquet: Smaller bouquets seem to be the newest trend and we loved how Kate’s included handpicked items from a Royal garden. We hope to see more bouquets with personal touches, including family heirlooms or something from the bride and groom’s home or garden.
• Bridesmaids: We loved how Kate’s sister Pippa wore white. This is a beautiful new trend we’d love to see continued.
• Music: The boy’s choir was a lovely and adorable addition one we hope to see recreated soon.

Another wonderful quote we loved, that we hope all brides and grooms will take away from this royal day: “Be who God meant you to be, and you will set the world on fire.” – St. Catherine Siena.

Looking for a fresh, scrumptious treat for summer? The Breakers’ chefs are willing to share their secret recipe for the Citrus Grilled Shrimp with Watermelon, Mango and Baby Greens.

Bon appetite!

Citrus Grilled Shrimp with Watermelon, Mango and Baby Greens.

3-13/15 Shrimp (peeled & deveined)
5 each Mango Carpaccio, 2 inch diameter circles
1 each Watermelon pedestal, 2 inches high by 3 inches wide
Baby Lettuces of choice (Lolla Rossa, Tango and Red Oak used in picture)
4 each Popcorn Shoots
1 oz. Champagne Vinaigrette
¼ cup Citrus Marinade
6 ounces Mango Mustard Sauce
Balsamic Reduction, for plating
Basil Oil, for plating

For the Marinade:
¼ cup Orange Juice
2 tablespoons Lime Juice
2 tablespoons Olive oil
1 tablespoon Cilantro, chopped
Finely grated Lime & Lemon Zest (1 each)
Salt & Pepper to taste

For the Mango Mustard:
2 ounces Mango Puree
2 ounces Grey Poupon
2 ounces Mayonnaise
Combine all three components and mix well.

For the Balsamic Reduction:
Reduce balsamic vinegar to a syrup over heat on medium heat, while reducing add a pinch of sugar for sweetness.

For the Basil Oil:
In a food processor combine 1 bunch basil leaves with 3 cups olive oil. Strain through a coffee filter.

In a small bowl, whisk the orange juice, lime juice, olive oil, cilantro, lemon and lime Zest, and salt & pepper. Brush the shrimp with the mixture and grill one minute on each side.

Arrange the Mango Carpaccio on the plate with the watermelon pedestal in the middle. Insert the baby greens and popcorn shoots into the center of the hollowed melon. Skewer the shrimp with a bamboo skewer and lean it up against the melon. Add the mango mustard and drizzle the basil oil and the balsamic reduction around the plate. Add the champagne vinaigrette to the greens and serve.


Note: This recipe makes one serving.

After months of preparations and worldwide anticipation, Britain’s Prince William and Miss Catherine Middleton will tie the knot this Friday, April 29, at Westminster Abbey.

Wherever you are, you can watch all the wedding action, as the entire Royal Wedding will be streamed live (and repeasted) on YouTube at The Royal Channel. The festivities begin at 10 a.m. London Time, which is 5 a.m. EST for us Floridians. All of the local and national news television stations will begin Royal Wedding coverage around 4 a.m.

The Royal site – click here – is chock-full of information, photos and video on the famous couple and the upcoming nuptials. This Friday, they will post updates, announcements and any ‘official’ information on the Royal Wedding.

The Royal account, @ClarenceHouse, will provide updates throughout the day of the wedding and post links to the live blog and live video stream. Follow the hashtag #rw2011 for complete coverage, or use it in your post to send the Royal couple a message.

The British Monarchy’s Facebookpage was recently redesigned to offer up-to-date info on the Royal Wedding, as well as create a new ‘event’ that gives fans a way to “virtually” attend the wedding.

If you want to get all the fresh photos of William and Kate, turn to Royal Flickr account. Photos have been posted of both William and Kate as a couple, their childhood and their families. On Friday, photos will be posted of the wedding day including the ceremony, the processional route, hidden corners of Westminster Abbey and the unusual views from inside and outside of Buckingham Palace.
